Marinara: classical mother of pizzas, just tomato sauce, parsley and lots of garlic. Vegan!

This ancient pizza was a snack that fishermen from Napoli ate while they were working at sea. It was first mentioned in 1734!.

 

We elaborate our artisanal pizzas from scratch with all natural ingredients, we use mostly local products, some are imported.

The recipes are original from Circus Bar, inspired by the Italian tradition of pizza making.

The Guatemalan people think “Circus Bar”, when they think of Panajachel or pizza, just like people think “Trivago” when they think of hotels.

We deliver our pizzas and other food to all the hotels and houses in Panajachel for free, our delivery service is totally gratis, very popular among airbnb customers.

Souflaki

8 ounces of grilled skewered sirloin cubes, marinated in lime juice and oregano, served with tsatsiki dip and hummus.

Roland Salad

Lettuce, tomato, onions with our famous vinaigrette dressing, topped with crisp fried bacon and croutons.

GRATIN DE BROCOLI

Sautéed broccoli in bechamel sauce, gratinated with mozzarella cheese.

Minestrone del Lago

We prepare it with regional vegetables and top it with a dash of olive oil and parmesan cheese.
